    Daily Chef from Sam's. They are lightweight, which took 5 min to get used to as my expensive knives were much heavier. Once you get used to them, you won't use anything else. I can cut a hundred pounds of pork butt and not get tired.

    They also have filet knives and Santoku style knives, although I haven't tried them yet. I do see them in a lot of restaurant kitchens though.

    Cutco makes good knives, but they are way overpriced. These from Sam's are essentially 6 bucks each.
