    Big chicken.

    Kary's is the best. Cajun will ask how so if it's all flour and oil. I just find it takes less to get where you want with the thickness. I like mine thick.

    thats the first one ive bought but had all 3. definitely liked karys over the other 2. was darker but not too dark.

    autins-gumbo-mix.jpg i consider myself a gumbo connoiseur. If it's not homemade i'll get Autin's gumbo mix over any of those greasy jar rouxs. It makes a nice, clean gumbo, not heavy and greasy. Just follow the directions and adjust and tweak as you like. (I add Slap ya Moma Hot, eggs,....)

    Also, a real gumbo is watery like a soup, it's not suppose to be thick like so many restaurants ruin it.
