I tried it a few years ago. I eat gumbo weekly so I experiment. I didn't hate it. But it can't get too soggy. I prefer it out.
You are missing the point though. This isn't some Rachel Ray red sauce gumbo we are talking about. These are State traditions that are regional. It's like the 15 different Louisiana accents you can come across. Sure, there are gumbo recipes that are better to certain people, but the goal of a gumbo, as I was taught, is using what you brung!
Never had boiled eggs in gumbo. Mom used to do a shrimp and egg where she would just crack em and let them drop in so I guess that would be poached. Not a deal breaker for me As for tater salad. I like it in, again, not a deal breaker either way. I can't wait to kick your ass at a gumbo cookoff using a jar. That will be the end of all this yap coming from the left coast. Poser
