I don’t have any Chinese relatives. The boiled egg was on the Kinder side. Pretty common in that area from what I have seen. What makes a Gumbo are all the things in it. It’s a cheap dish at its roots. Eggs fill the belly and feed a lot of people when funds are tight. I am talking about a hard boiled egg btw.
I'll put gizzards in my fro yo. One of the things I miss the most is hitting a gas station and rounding up a bucket of fried livers and gizzards, but I have never even heard of them in a gumbo. Ours was always on the side of the bowl. Like, half in half out. I've seen people plop it down in the middle and mix it in. I never did it like that. More like take a scope of it and the get a little gumbo on it.
