    Ok folks, time to stop salivating while reading messages here about what you've eaten lately. Need to share some of these recipes with everyone here. I'm thinking Mr & Mrs Grad will try one recipe a week and see what we're missing.

    So, who has the first suggestion?

    Grilled Chicken Alfredo Pizza

    Pre-cooked Pizza Crust (sorry canned version won't work guys)
    Alfredo sauce
    Chicken
    Mushrooms
    Spinach
    Garlic
    Shredded cheese

    (I don't do measurements... so everything is "to taste.")

    Grill the chicken with your favorite seasonings
    Sauté the mushrooms, spinach and garlic in a skillet
    Place the the dough on the grill and coat it in alfredo sauce
    Cut up the chicken and throw it on the pizza with the spinach, garlic and mushrooms
    Top it all with the shredded cheese and cook til toasty

    Yummo!

    Easy peach cobler:

    1 box butter recipe cake mix
    1 can sliced peaches
    1 stick butter/margerine

    Pour can-o-peaches with juice into cake pan. I usually use my corning ware.
    Dump cake mix on top. Flaten mix.
    Slice butter into thin squares and put evenly on top of mix.
    Bake about 34 - 40 min or until golden brown.
    Top with ice cream. Not optional.

    other than gumbos, my favorite soup. i make it a lot!


    OYSTER ARTICHOKE SOUP

    4-6 green onions, thinly sliced
    3 gloves garlic, finely chopped or crushed
    1 stick butter
    3-4 Tablespoons flour
    3 cups chicken broth (i prefer home made broth)
    15 oz can artichoke hearts drained, rinsed, and coarsley chopped
    2 Tablespoons chopped parsley
    2 bay leaves
    1 teaspoon thyme leaves
    salt and pepper to taste
    1 pint oysters

    in a saucepan, saute the green onions and garlic in butter till soft. do not let butter or garlic brown. add flour and stir until roux is a light golden. add chicken broth and stir or whisk until smooth. add artichokes, bay leaves, thyme, salt, and pepper. simmer for 30 minutes. add oysters , oyster liquid, and parsley, cook until oysters and just cooked and thoroughly heated (about 5 minutes). garnish with chopped parsley or thinly slices green onion if desired.

    an alternative to the green onion is shallots. i prefer the green onion.

    Breakfast sandwich

    Ingredients:
    wheat toast with mayo (2 slices)
    fried egg (over hard)
    3 or 4 slices of crisp bacon
    lettuce or alfalfa sprouts
    slice of fresh tomato
    salt and pepper.

    Directions:
    1. Assemble
    2. Consume

    i dont really cook, but this is the one thing i make that is spectacular

    buy pork loin
    marinate pork loin in whatever you have, worcestershire, even soy if you are feeling asian
    kosher salt, not as much if you already used soy.
    grind some pepper
    nuclear hot cast iron sear 2 mins a side, i realize the pork loin is cylinder-shaped, doesnt really have sides just pretend it isnt, or roll it around a bit.
    whole cast iron skillet into oven to finish
    mustard, a knife, hamburger buns
    done.

    nothing fancy necessary, pork loin is so good, all you need is a bun and the mustard and you are squattin in high cotton.

    Looking for some good fish, seafood stuffing, and sauce (remoulade, etc) recipes if anyone has them.

    cover in dijon mustard, bake, will cut like buttah.
    I also cover with cherry preserves when it's colder outside

    Hmmm...may make that tonight.

    Take advantage of produce while it's in season and at it's cheapest.
    Ex:Corn ($1.00 for 5 ears at my store), cut corn off cob (remember to srape your knife along the cob to get all the flavor), cut onion, saute with S&P&Tony's, amazing

    Saute up some zucchini or other green vegetable

    Easy meal, affordable, good for newly married.


    BEST DIP EVER- I get requests for this every time we go to a friends. Good for tailgates.
    1 c Mayo (I use Blue Plate, cause it's the shizz)
    1 block Cream Cheese
    1 c Sour Cream
    1 carmalized onion- chop, cook on low heat for...ever. It takes awhile, but it's worth it
    1 tsp Cayanne Pepper

    Serve with Zapps or cut veggies



    If someone will post a Spinach and Artichoke dip that is exactly like the one at The Chimes I'd greatly appreciate it!

    Stuff Chicken Breast w/Monterrey Jack Sauce

    2 boneless chicken breast
    1 cup stuffing mix (any box brand will do)
    1/4 cup chicken broth or water
    1 tbl butter
    1 tbl flour
    1/2 cup milk
    1/2 cup monterrey jack or your favorite cheese

    Pound chicken breast until it's even in thickness. Season both sides. In a bowl, add just enough chicken broth or water to the stuffing mix to moisten, but not too wet. Add half the stuffing mix to each chicken breast. Roll the breast and place seam side down in a baking dish. Bake at 375 for 15-20 minutes.

    In a saucepan, combine butter and flour and cook for 2-3 minutes over low heat. Do not brown the roux. Add the milk and thoroughly mix with the roux. Stir in cheese until smooth. Add salt and pepper to taste.

    Remove chicken from the oven and spoon cheese sauce over it. Return to oven for 5-10 minutes or until chicken is cooked.
