Stuff Chicken Breast w/Monterrey Jack Sauce 2 boneless chicken breast 1 cup stuffing mix (any box brand will do) 1/4 cup chicken broth or water 1 tbl butter 1 tbl flour 1/2 cup milk 1/2 cup monterrey jack or your favorite cheese Pound chicken breast until it's even in thickness. Season both sides. In a bowl, add just enough chicken broth or water to the stuffing mix to moisten, but not too wet. Add half the stuffing mix to each chicken breast. Roll the breast and place seam side down in a baking dish. Bake at 375 for 15-20 minutes. In a saucepan, combine butter and flour and cook for 2-3 minutes over low heat. Do not brown the roux. Add the milk and thoroughly mix with the roux. Stir in cheese until smooth. Add salt and pepper to taste. Remove chicken from the oven and spoon cheese sauce over it. Return to oven for 5-10 minutes or until chicken is cooked.
