I have a collection of different hot sauces that i use for different things when I cook. However, my go to sauce, if I could only have one, would be Louisiana Hot Sauce. Tabasco has just always seemed a bit to "vinegary" to me.

    What's yours?

it would be 1a and 1b. tabasco and louisiana hot sauce. i love both, and it really depends on my mood. some days i want the vinegar and some days i want the more pepper flavor.

edit: that said, the one i keep in my truck is tabasco. sonic burger with tabasco on it. mmmmmmm!

Louisiana Hot Sauce is my favorite. Adds the kick without completely raping the flavor like Tabasco. There was one variation of Tabasco that I tried not too long ago that wasn't as sour as regular Tabasco. I forgot what it was called though. It was also quite tasty.

I'm with you. Tabasco is just too "in my face" for most things. Was the other Tabasco you mentioned the Tabasco Gold?

I like Tabasco in soups, gumbo, spaghetti/pasta, potato salad, on fish and in sauces. LA Hot Sauce for poboys, jambalaya, pizza, eggs, french fries, burgers, and on vegetables. Franks Redhot for wings and chicken strips.

I'm always up for trying new sauces but those are the three I seem to come back to.
