Got some chicken marinating in jerk sauce. Going to sautee an onion and bell pepper, then add chicken to pan and cook it over medium-low heat. Probably make one of those Lipton rice packets with it -- I'm thinking mushroom, especially since I've got some fresh mushrooms.
Well, I ended up modifying this a bit. The jerk sauce was a bit sweet, so I added a ton of Louisiana hot sauce so the pepper could cut the sweet, and the vinegar would add some flavor. After adding some beer, and letting the thighs cook down, there was a ton of tasty sauce. So, I scrapped the Lipton rice junk, and just made some basic rice. It turned out to be rather unbelievably good, far surpassing my expectations. The wife normally HATES any sort of sweet flavor with her entree, but this one did the trick. My only regret is that the damned chicken took me 15 minutes to clean up and cut. FIFTEEN MINUTES for two damned packs of thighs??? The chicken industry is getting sloppy.
