whenever i learn that i will soon be eating brisket, i get pretty excited.

and i have said this before, but the best food in the whole world is crawfish pies. and not by a little either, crawfish pies are 124% better than their closest competitor.

Last weekend I made a couple of crawfish pies. Yummmm! If you have the River Road Cookbook try the crawfish pie recipe in it.

    I'm shocked Jambalaya's winning,
I've had too many "weak" Jambalaya's at fundraisers that they've stretched so it's tastless

yes boudin needs an honorary place.
I'm for all of the above, Gumbo a close 2nd.

    Jambalaya, for Heavens Sake!

When you get tired of chicken and sausage jambalaya, try making a shrimp and ham jambalaya. I use tasso sometimes, for the ham.

And when you get tired of that, there is a great recipe in the Vernon Roger book for Black-eyed pea jambalaya that is unusual and really tasty.

    Good stuff.
