Tater Tot Casserole

    I know this ain't real Cajun, but it has been a big hit at a couple of events this summer. Excellent for breakfast, morning after, too!


    Tater Tot Casserole

    Estimated time:
    10 mins prep time, 50 mins cook time
    Number of servings:
    10-12

    Ingredients:
    1 32 oz bag tater tots
    1/2 cup sour cream
    1/2 cup butter
    1 cup cheddar cheese
    1 can cream of chicken soup
    1/2 med onion (chopped)
    1 cup corn flakes

    Directions:
    Thaw tater tots and break up. Add ingredients one by one, mixing after each. Spread in buttered pan, best if let set overnight. Top with corn flakes that have been mixed with 1/2 cup melted butter. Cook at 350 for 50 mins.

    Then top it with 1.5 pounds of sausage, top that with more grated cheese, then top that with fried eggs (medium so the yolk runs out) then top with a nice spicy salsa and you got yourself quite the sit down. Sop it all up with a slightly over lightly toasted wheat bread (have to at least try to be healthy).

    Hell yeah I'm cooking this soon.

    A friend of mine has a restaurant in Fort Worth, and one a thing he does is serves waffle fries with bacon and chives, and gorgonzola cheese. It's awesome!!!

    Gawd, it sounds like a milkfat and carbohydrate critical mass.

    Always liked tater tots, though . . .

    cant beat tater tots. mixing in lots of crumbled bacon sounds good too. and maybe top with crumbled bacon for good measure!

    My wife does something similar with a bag of frozen has browns. It's amazing.

    I would drop the corn flakes and use bacon for the crunch. I would probably also put this between a couple o slices of bread with a few fried eggs and a spoonfull of really thick hog's head cheese grits.

    That is exactly how we usually fix it, but I posted the "real" recipe. If one daughter helps, even more cheese goes in. The corn flakes are much better than they sound, though.

    I am gonna have to try the bacon. Sounds like it will be even better.
