A torch has been handed down. (que inspirational music) I'll be in charge of a tailgate next Saturday. I've always been an invitee (aka food/booze scavenger), but never the person in charge. We'll have a small set up (only 4-6 people) What should my plan of action be? What is a must to have? So far all I can think of are the drinks (Beer, Vodka, Tonic, Limes). It's too hot to make gumbo or jambalaya, and I really dont have the supplies to make them anyway (this being my first time it's all on me). Hamburgers are always good, but a bit boring. Suggestions? Plus, I'm still waiting for anyone who knows how to make the Chimes spinach and artichoke dip
A good twist on regular burgers is stuffed burgers... just as easy to make as the regular ones and you can get real creative with the stuffing. There is also a New Orleans thing called a hamdog but you'll have to get one of them to explain it to you. Four- Six people is a really good starting tailgate. Have fun!!
i will have to think a bit and get back to you on dishes and recipes. but right now i am busy imagining and getting inspired by the image of a wooden spoon being passed on in a cermony with great solemnity. :wink:
question for you tex. do you have any mini-cheesecake pans for the little 2 inch cheesecakes? i have a recipe for a savory cheesecake appetizer that is served with crackers, but if you make it in mini cheesecake pans it is a great finger food type appetizer. with the cracker crust, the cracker is built right in.
the mini loaf pans would work for making a spread type appetizer to be served with crackers for this recipe, if you can get it out of the pan like you can a cheesecake pan. my recipe calls for a regular 10" cheesecake pan with it to be used as a spread type appetizer. i have made it in a mini cheesecake pans that are 4.5 inches and served it as a spread for smaller groups, or the mini 2 inch size that is a finger food and no crackers required. if you have a regular cheesecake pan, you can make it in that and serve with crackers. i will give thought to other ideas.
It's so hot for the September games, that we often just make a po-boy buffet and everyone makes their own sandwich. Or sometimes I get a platter of boudin balls from Tony's and a box or two of Popeyes chicken. Smoking a brisket the day before and making BBQ sandwiches is tasty and doesn't require anyone to stand around a hot grill or cooker in the afternoon.
For the hot weather games we either fry fish or shrimp. One time we made tacos. That was the best tailgate ever.
Don't know about the Chimes spinach and artichoke recipe but I have my mom's which is wonderful! Let me know if you want it.
