Not a fan of box dinners but there are them days I find the house to myself. 2 boxes of Zatarain's dirty rice. Little over .5 lb each chicken livers and chicken hearts. Soaked hearts and livers all day in half-n-half. Sauteed in butter, bunch of garlic, shallots and green onyon. Drained and tossed in with the rest of the box as directed. I am throwing away the boxes and calling this stuff as my own. Only thing missing is a new name. For now, it is awesome...infinity.
I eat the hell out of boxed dinners for the convenience, but hearts, livers, kidneys, lungs, gizzards, and all other manner of offal and guts get tossed. I won't even eat dirty rice with liver in it.
Good thing I know who to please cause the wife thought it was fantastic!I mashed the liver and mixed with the rice so it had more flavor than texture. If you eat boudin then it is about the same thing, just pork liver rather than chicken. Rabideaux's in about 2 weeks...
