Recipe for an alligator sauce piquant?

    I've seen a few online and I have a giant John Folse cookbook but I'd rather hear some of your suggestions.

    I use the one in the John Folse cookbook, but never for gator. It's pretty good and certainly a good starting point.

    A good starting point would be to "choot" an alligator

    I would follow my turtle recipe. Not sure how gator sauce picante will taste though. It's hard to beat fried- as I'm sure you know.

    I like alligator Parmesan. I take fried nuggets top it with a creole sauce and fontina and Parmesan cheeses then put it in the oven on broil until the cheese is bubbling. Take it out top it with chopped green onions!

    I bet it would be great bar-b-qued. Slice it thin first. Or possibly leave it on the tail and wrap the tail in foil after giving it some color first.

    The best one I've found is in the Louisiana Wildlife and Fisheries Cookbook. The wife has used that recipe a number of times. I'll try and see if I can get her to post it.
