Pig's ears

    Challenge- should you choose to accept it-

    I need at least 2 recipes on how to cook pig's ears. It cant be too fancy as it will be for low income people. I've never cooked with them, so I dont know where to start. I was thinking about a soup and a jambalaya, but for all I know after the meat comes off the ear people will be left with some gross piece of cartelage floating around.

    The cooking process cant be too involved (no grilling or broiling) and the ingredients cant be too crazy (even things like cumin may be too much). The recipe(s) need to be simple, and easy to follow.

    Gross, I know, but I'd appreciate any help I can get

    Darlin', I can tell you the way I think pigs ears should be done.

    1. Boil them long enough to kill the trichinosis. Let them cool.

    2. Put them on a pan and take them to the back door.

    3. Holler "Here Jubal!" "Here Bedford!"

    4. Toss the pigs ears to the hounds. They don't mind cartilege at all.

    Well now, ifn it hadda been pig's feet, then mebbe I coulda hepdya, lil' dahlin....:hihi:

    Yea, yea....

    I KNOW it's weird....for some reason we have a shipment going out to an agency of ours and I've been given the assignment to come up with a recipe.

    Seriously though- could they be cooked in a soup? Will weird pieces of cartelage float up to the top and scare people?

    I do appreciate being called darlin' :redface:

    My workplace is predominantly African American and I will ask as I understand, culturally speaking, it is a delicacy for them. And I don't mean this to be derogatory. We joke around about B & W here. Just this morning, the custodian (Who is black) was telling a teacher the VT shooter was Asian and I asked if he thought he was going to be a white man. He always asks me if I haven't found him a "White mans' job yet". :hihi:

    Bad news........I've asked at least 6 brothers and sistas and they look at me and say, "PIGS EARS". Two of them told me, "I DON'T EAT THAT, now, pigs' feet". :hihi:

    Thanks for the effort! I asked around and got similar responces. One guy (kiddingly) asked me "Why do white people think we only eat the crazy pieces of pork?". I referred him to chittlins. He then referred me to tofurkey. Touche', man, touche'.

    Ever had "Oreille de Couchon" which translates to "Pig's Ear" ? Growing up we used to have a friend who made this dish made of dought that is fried and then coated with syrup and chopped pecans, delicious. You can try a version at Cafe Des Amis in good old Pont Breaux (Breaux Bridge):

    In additon to being able to find pickled pig feet in south Louisiana, you can still find pickled pig snout ... yummy !
