I don't cook this, but I told a lady at work about it (she's from Hammond orig.), and she loved it so I'll pass it on again. Some folks don't like okra because it is slimy, or makes their gumbo slimy. This is what my mother always did. She got a big black iron pot and put a little cooking oil in the bottom. She would slice the okra into little rounds, 4 or 5 to the inch. She got some diced tomates (canned is fine), and a diced onion. She threw all the ingredients in the pot on medium heat and started stiring, not constantly. After a while, the okra started to slime, good. Keep cooking and stirring. After a while, the slime starts to cook away, and you get a moist okra that is not slimy. She would put this in freezer containers and put it in the freezer. When we made shrimp okra gumbo, she did as normal, and threw in her "smothered okra" at the end since it was already cooked, and voila, we had 'non slimy' shrimp okra gumbo! Man, that was some goooooodddd stuff!!! I just thought I'd share that. Anybody else do their okra that way?
That's my favorite way to eat it and if you put a little bit of vinegar it cuts down the "Slime". My grandmother cooked it like that too. :thumb:
My bride cuts it and cooks it until tender, then she drains the slime. She then mixes in a marinara sauce, melts a little parmesan on the top and makes a casserole out of it. Really freakin' good, I say. :thumb:
Okra is supposed to be slimy. That's why it thicken gumbo so well. My mom breads okra slices and fries it. That's the way I like it.
I never go to Picadilly and not eat some of their fried okra.......I love it like that too. Boiled okra is hard to beat too, in my book. :thumb:
I love eating okra not matter how it is prepared. I really enjoy dipping fried okra in a Ketchup, Tabasco, Tonys mix sometimes I add horseradish.
i have been craving fried okra lately. it is one of those foods that just screams summertime. i would be happy with a plate of fried okra and a couple of big fresh from the garden tomato slices for dinner! and a big glass of sweet iced tea. *drool*
Yeah, you can't beat okra. I just hate picking it off the branch. Itchy suckers! My wife likes to cook it down and then put it with her ground meat when she makes rice dressing or dirty rice (whichever side of the river you are on). You can't beat rice dressing with okra in it. Fried okra rocks too!
