As most of you know, I like to cook. One of my hobbies is cooking for large crowds and festivals. In May I drove down to St Amant to pick up my new Jambalaya pot. It is a monster! 45 gallons. Using 2 pounds of meat per pound of rice, I can comfortably fit right at 90 pounds of rice and 200 pounds of meat in it. That works out to about 900 servings out of one pot. The cool thing is that it keeps the food hot all day without having to turn the fire back on. It and its' stand weigh about 400#. It sure is nice cooking for these really big crowds out of one pot and not having to slave over multiple pots all day.
yep, 900. In BR I (as most Jambalaya guys) figure 6 people per pound of rice. Here in TX, 10 ppl per pound. I've done it for 8 years here and it always works out.

Do Texans even know what jambalaya is? Do they eat it if you don't serve it with barbecue sauce or salsa?
