    I picked up a brisket and some ribs for an appetizer while waiting on the brisket.

    I inject it then let if cook 45 minutes to an hour on each side (depending on how big/thick), then I wrap it in foil with fat cap down for another hour or more.

    It’s not my strong suit and I need to learn to use a thermometer for internal temp but I know when there is a 1/4 inch pink around the edge it’s good to go.

    Wendys here, Daves Double. Held the mayo to make more healthy. Yard/housework all day... Maybe have time for somethin tomorrow.
