I'll share my secret sauce, best stuff in the world for fried catfish or fries. Make about a cup for dipping: ½ mayo, ½ ketchup, and a few drops of Tabasco, stir well. Maybe some Tony's if it's handy.
people seem to be wildly divided about mayo. i actually dont care much either way. my mom used to put it on my grilled cheese sandwich. i didnt notice it was terrible until a friend came over and he had one and said "what is this miserable mayo doing here". and i realized he was right. the mayo is there to add fat and creaminess to things, and a grilled cheese is already all set in that department. so i told my mom to cut it out and she put mustard on my next one, presumably just to piss me off.
