I haven't made sausage since my dad had hogs in the 60's when I was a youngster. My favorite was the breakfast sausage packed in cotton sacks instead of casing.
After you get the Kitchen Aid attachments try to find this cookbook: Hot Links and Country Flavors: Sausages in American Regional Cooking by: Bruce Aidells and Denis Kelly They travel across the country (some recipes from a mom and pop place in Breaux Bridge for example) and find the best...we have created spreadsheets on our favorites so we know just what to get at the store..Dr'd em up...added and deleted stuff....its so much fun to find and try new formulas My dad tried to find a copy recently and said he thought it was out of print...not sure... so you may have to look at the used part of Amazon, but its a great resource.
thanks for the cookbook hint. that would be a good one for my collection. i havent made sausage in probably 6-7 years. (yes, i have the kitchen aid attachments.) i used to a lot. i need to get a new smoker, some casings, and make a batch. edit: i just checked and the cookbook is listed on amazon both new and used.
i got the cookbook. thanks for the recommendation. i find it interesting that the chapters are: the south louisiana the northeast the midwest the southwest west coast cooking new american cuisine i love it that everything else is lumped together by region, but louisiana rates its own chapter!! :thumb: cant wait to settle in for some good reading. this is gonna be a nice cookbook to my collection!!
