Anyone have a good hog head cheese recipe they would like to share? I've cooked alot of things but have never made any hog head cheese. I would like to try and make some but have only found one recipe and not sure if it is any good or not. Thanks!
John Folse's recipe. It is very similar to the way my grandfather used to make it at his butcher shop.
Never tried to make it. Hell I've never had a hog's head. My Dad never made it either, but he always seemed to be able to find country stores and smokehouses that had good homemade head cheese.
My grandfather had a butcher shop. Back in the 30's-50's, they kept chickens and pigs right out behind the store. Everything was "prepared" on sight. Couldn't get any fresher than that!
There nothing like good hogshead cheese hot right on the pot on some freshly baked french bread. My grandpa every mardi gras would cook some when it was done cooking we could just grab big spoon fulls straight out the pot and throw it on french bread.
