I have a bunch of frozen back strap in the freezer that I want to cook. Does anyone have a good recipe for this?:thumb:
You can cook it a thousand different ways. It just depends on your preference. People cook backstraps in dishes that are like caseroles, grill them, or even fry them. This link should give you an idea. I had some burgers a few weeks ago. <link>
My favorite way to cook backstrap (actually the tenderloin) is to cut it into strips, marinade overnight, take it out, season it and then rub mustard, then season it again. I then take the meat and southern fry it.
Cut into steaks, marinate in milk, season with Paul Prudomme's blackening seasoning then fry on hot black iron skillet.
Cut a slit in the backstrap long ways about 2/3 deep. Stuff it with cream cheese and jalapeƱos. Then close and wrap with bacon. Use some tooth picks to hold it together. You could marinate it beforehand if you want but not necessary.
Those are my favorite! sneaky, If I'm not mistaken, the milk is used to help extract the blood from the meat. just remember, it' very lean meat and can dry out quickly and you'll be chewing on that sum-biatch for a while.
