I just got back from Gulf Shores and my wifes uncle chartered a fishing trip for us, we brought back some red snapper, and spanish and king mackeral. I'm looking for a good recipe to cook these mackerel steaks. I want to cook them before the week is out b/c I am trying not to put them in the freezer. Any suggestions? Thanks in advance.
Caught a bunch of king mackeral a couple of weeks ago. The reality is, they don't taste good when you compare them to that snapper. My advice would be to eat all the snapper you can and maybe do the mackeral in a fish fry or feed it to the kids. The snapper is good fried as well but it seems like a shame to do that.
I have heard from various people that the mackerel doesn't taste near as good as the snapper. As far as feeding it to the kids, I'll have to pass b/c the only kid I have is in my wifes belly and I was told that she shouldn't eat it b/c of the high mercury levels. I brought the mackeral home with me b/c most everyone else that went fishing flew in and they knew they couldn't bring it on the plane. but thanks for the help. I figured i could have a few close friends over and do something with them just to get rid of them and not waste them.
Snapper is one of my favorite fish. Be sure to keep the skin on or use a nice non-stick pan since the meat will become a pile of mush if not. The best quick-and-easy recipe is to marinate the snapper in lime juice and fresh ginger for a few minutes. After a quick grill, top with a fruit salsa and Salt and pepper. As for the kings, toss them in the garbage along with the SM. Mackerel in general are very oily and taste like poop. The mercury content is nothing to be excited about either. If you still really want to cook it, use a traditional cedar plank recipe.
If you really want to do something with it, invite a bunch of people over and fry it. It's really not bad that way.
Honestly, there isn't a thing you can do to make King not taste incredibly oily. Of course you or your friends may still like them so have at it you want to. As for the Snapper -- keep those fillets for yourself.
The Spanish Mackerel isn't bad, but the King is best thrown back. However since you have brought it home you might as well try it. The best thing you can do is soak it in milk overnight, that will get some of the oily heavy taste out of it. After that pick a recipe or just fry it.
That's about the only living thing in my house that would ever eat it. Hey, wouldn't even have to add an egg!
