On Mondays I like to eat red beans and rice. Often at Georges, where they make beans with sliced sausage cooked in the beans, served with garlic french bread. And often at Piccadilly, where the beans are plain, the sausage is in links on the side and I can get cornbread. So what is it? Sausage in . . . or sausage out. Corn bread . . . or garlic french bread. Plate of rice with beans over the top . . . or bowl of beans with a pile of rice on top. Shot of Tabasco at the table . . . or a sprinkle of Tony Chacheres. Chopped green onions on top . . . or a sprig of friggin' parsley.
here's how i like it even though I know traditional is opposite. sliced up sausage garlic french bread (i like cornbread but it fills me up too soon) bowl of rice with beans over the top (I eat most everything like a gumbo) plenty Tabasco can do Chopped green onions on top but not preferred also like it soupy not dry.
yes. except for the parsley.:grin: but if i have to answer, i prefer over rice. garlic french bread instead of cornbread, but i wont ever turn down cornbread. lots of tobasco. the sausage either way tho probably sliced up in the beans. less fuss when eating that way.
Diced tasso and sausage pieces (about an inch and a half long) in the beans with a big ole fried pork chop on the side. I like to add chow-chow. Vegans need not apply.
Corn bread in the bowl, then a little rice, then the beans. When I make mine I slice up half the sausage and put the other half as links. No hot sauce\seasoning unless they need it. I had a craving for red beans and corn bread last week. I got lazy and picked up a few cans of Blue Runner and doctored then up a little. Have to say they are pretty good.
Sausage in, alternate between corn bread & french bread, beans over rice, both Tabasco & Tony's, no onions or parsley on top.
I put Tasso in my white beans too. When you make your own, try this: Saute Onions, bell pepper, etc., adding little bits of water until they start to darken. Add tasso and sausage and cook just like you're making a gravy. It will be pretty thick and good enough to eat, but at that point add 2 or 3 cans of Trappey's Jalapeno Navy beans or Blue Runner New Orleans style Red Beans and you will have yourself quite a treat. Add chopped onion tops or shallots at the end and enjoy,
