DORRITO CASSEROLE 1. 2LB EX-LEAN GROUND MEAT 2. 1 CHOPPED ONION 3. 1 CHOPPED BELL PEPPER 4. 2 ENVELOPES TACO SEASONINGS 5. 1 LARGE CAN TOMATO SAUCE 6. 1 CAN ROTEL DICED TOMATOES-OR DEL MONTE MEXICAN STYLE DICED TOMATOES 7. 1 BAG THINNEST-EGG NOODLES (NOT SPAGHETTI) 8. 1 BAG NACHO CHEESE DORRITOS-CRUSHED 9. 1 BAG SHREDDED MEXICAN STYLE CHEESE 10. SALT AND PEPPER TO TASTE COOK NOODLES, DRAIN AND SET ASIDE. BROWN MEAT,DRAIN; ADD ONION, BELL PEPPER, SAUTE TILL SOFT. ADD TOMATO SAUCE AND TOMATOES-BLEND WELL. STIR IN NOODLES,TOSS WELL IN MIXTURE. COOK ALL THIS ON MEDIUM HEAT STIRRING CONTINUALLY AFTER ADDING NOODLES.,FOR ABOUT 5 MINUTES. TURN OFF HEAT. Today I have consumed: 2 sausage biscuits, 1 ham biscuit, icee (coke and strawberry mixed), 2 fried chicken breasts, Zaxby's chicken club (made sure to take lettuce and tomato off) with fries, pickle. This could be the healthiest thing I have had all day. :lol:
Quick hunting camp Frito casserole. Feeds two hungry men. Sticks to your ribs. one can chili, one can tamales, one bag Fritos, one bag grated cheddar cheese. Make layers of Fritos, unwrapped tamales, and chili until you fill your dish/pot. Make a layer of cheese on top. Heat until the cheese on top is toasted. More Fritos on the side and a bottle of Texas Pete.
I make very much the same thing (2 cans tamales but fresh is better) but start the layers with tamales then a layer of olives, raisins, and chopped onions, then chile, then fritos and topped with cheddar. Get out of my pantry, Red! :grin:
Not sure if it's a Cali thing or just a raisin thing. Folks either like em cooked or they don't. One of my favorite stuffing recipes calls for raisins and I like my cinnamon rolls with raisins, and I sure as heck enjoy my fermented grape juice! :grin: As for the tamale recipe, it's more for the sweetness to balance out the chili/spicey. Add some sweet corn instead.
Yea, I've had chili with corn in it before...good. When I was a kid my Mom always had a tendency to spice up the chili pretty good so she always made mac & cheese with it so the kids could deal with it better. I still like it like that.
