So I'm back home in BR for the Christmas holidays waiting for everybody to get off work so me and the bridequeen go to Mandina's. Awesome schtuff. :thumb: So I'm reading this "504" glossy mag for BR folk (not bad for free BR publications) and I stumble across a picture of a guy that has a pasta shop in BR. I see dude's picture and I told my wife "Hey, I know that guy, Frank Fresina. He was in my class at good ol' Redemptorist! I gotta go see him" Started driving west on I-10 towards my brother's, and I call him on the phone. Sure, he and his family love Frank's pastas and sauces. I ask him if it was still open, and he said, "Naw, it's 6, and I think they close at 5". The hell with it, I say and I get off I-10 and go to Fresina's on Drusilla @ Jefferson. As I pull up in the parking lot, who is walking out but Frank himself, working late. I probably haven't seen him in 30 years, but he still looks the same as he did at RHS. Sure he remembered me, and we spent a time introducing wives and doing a some reminiscing. He was and still is a really good guy, the same dude that he was in high school. Sorry for the long story, but I know that most of the BR folks already know about Fresina's, and they make EXCELLENT hand-made fresh products. I'm glad to see he's still in business! They have excellent sauces and it's so nice to have fresh pasta that doesnt come in a pre-packed container. I was often helped by an older lady- dont know her name, but she was always so helpful. :thumb:
That's Frank's mom - she actually has a lasagna recipe in Chef John Folse's book "The Encyclopedia of Cajun and Creole Cuisine", a great book that I gladly accepted as a Christmas present from a favorite aunt in '05. If you can get a recipe in a John Folse recipe book, you gotta be a pretty damn good cook. :thumb:
