Food for Saints/Vikings

    We are having several friends (10-ish) over for the game. They are all native Texans and are cowboys fans who are cheering for us now that they lost. They all love my cooking and have overwhelmingly requested that I cook "something cajun" for the game (we have dinner with them all frequently at each others' homes). Biggest request so far is gumbo, but I'm just having trouble getting inspired for that "something special" to make it more than mundane (to me anyway). I know that good cajun food is a treat for them, but to me gumbo just doesn't have that bam factor. I will probably make it, but need to figure out a way to make the food memorable. Ideas? Steve, anybody?!!

    It needs to be something that can stay ready for people as they get hungry for a meal or just want to snack. We aren't doing a sit down dinner. I just want people to be able to serve themselves awesome food whenever they want during the game.

    So, what are you doing for your party, and what ideas do you have for mine?

    Crawfish Dip
    Crawfish pie



    For our party here was are serving exactly the same thing we served last week. People that did not come last week can't come this week. Being a bit superstitious.

    Hell, they are Texans. Anything you make and tell them is Cajun will be Cajun to them.

    Marinate a bunch of crab claws in Italian salad dressing if the fridge for a few hours before serving. Makes great finger food.

    Or you could boil some shrimp

    Or you could order some live crawfish overnighted to you but right now that would be pretty expensive.

    Or shrimp or crawfish in a white sauce with pasta.

    Can you get fresh crabmeat? Make some crabmeat au gratin or stuffed crabs or both.

    Boudin balls would make a great appetizer. Have a big bowl of craklins for your guests to munch on

    Damn, I'm getting hungry and I don't have any of that stuff here at the house:bncry:

    Boudin, great idea. I buy a lot of it when I come down for whatever reason. I still have a good bit in the freezer from Billy's in Krotz Springs. I'll definitely do some of that. Hadn't even thought of it till you said it. Thanks! I'm telling you, I am just having trouble getting my mind wrapped around food for this thing.

    Boudin or boudin balls. crawfish dip. for desserts king cake and bread pudding.

    broccoli,cauliflower and celery tray
    For the dip half Velveeta half Philadelphia cream cheese add a little liquid crab boil and touch of salt.
    Tony's or slap your momma batter fried hamburger dills and or small cubed eggplant.Saintslogo
    Boil some corn and garlic cloves. Cut the half cobs in half.

    King cake for dessert is an absolute must! Rouse's does very good ones, and you can order them on their website and get it FedEx'ed overnight.
