OK, so I peeled about 20 pounds of leftover crawfish from a boil on Friday night (about 2 pounds of tails). Problem is - after a full day of eating them, and a full night of peeling leftovers (till 1 am), I couldn't bring myself to clean the heads for stuffing. My finger tips are still a bit swollen and sore. But now I REALLY want to make Bisque. Short of buying some cleaned heads from the seafood store, anyone have ideas for the crawfish stuffing? I don't think it'll hold together meatball-style. So I'm wondering what else would work...:huh: C'mon Coonazzes - one of you surely has an idea.
why not a type of dumpling? ground crawfish, breadcrumbs, egg, a small bit of flour for binding, and seasonings that got cooked in the bisque? off the top of my head, thats the only thing i can come up with. whatever you come up with, let us know how it turns out.
Or put it in some of those crab shells, same chit. I've seen them in boulettes (sp) though, it can be done.
