I'm going to fix some Chicken Fajitas for the very 1st time. I'll be cooking them for about 50 employees. I'm looking for a good chicken fajita marinade or seasoning. Anyone have some good ideas they would like to share. I also plan to saute onions and peppers in a skillet. Any ideas on for this? I could just charcoal the chicken and cut it up in strips. I want to do more than that. I want the chicken to have a really great fajita flavor.
Do y'all have HEB up in OK? They have marinated chicken or beef for fajitas that's amazing. I think it's just in Tx, but if ya'll have it I'd try it. I've used McCormick's seasoning. I'm sure there is something else out there that's better, but it worked well for me. Marinate your chicken in that and some oil (dont need too much oil) for at least 5 hours. Cook your onion and peppers in some of the leftover maranade- BE SURE TO first cook the maranade until it reaches 160 deg+ then add the pepp/onion. I've grilled my chicken for fajitas. To me, there is nothing better than grilled food. :thumb: Hope it works out well
Grilling the chicken is actually a pretty good idea. There are plenty of decent marinades at any large supermarket. I would marinate the strips, at least overnight, and then grill them. You could also marinate the julienned onions and peppers (mix in some red bell pepper as as well) and saute them briefly so they still have some crunch. Set up a serving line with soft tortillas, refried beans, sour cream, guacamole, cubed tomatoes, the meat and shredded cheeses and you will be a star.
For the vegetables, definitely include cumin in the seasoning. Also, some lime juice on the chicken and vegetables.
Speaking of Grocery Store Fajita Kits I was in Sam's today. Of course, little old ladies were making their food samples. I walked by sample station that smelled absolutely delicious. A grandma was making chicken fajitas using an "On the Border" chicken fajita Kit that serves 10. I tried one of them. It was freaking delicious. You guys might give it a try sometime.
