Yesterday I ate lunch at a small combination seafood market and restaurant called Heads and Tails. It is off Perkins Road near Essen on Silverside Dr. The muffaletta was by far the best I have ever had outside the Central Grocery in NOLA. I talked to the owner after I ate and he told me that the owner of Central Grocery had taught him how to make it.

(damn, now im hungry again.) speaking of muffaletta's this thread made me think of a recipe i ran across not long ago. the name muffaletta is in it, but it is NOT a muffaletta. it is a rachel ray recipe and i cant stand rachel ray. her voice is like nails on a chalk board to me, and this recipe doesnt do anything to win me over either.... meatless muffaletta panini 2 handfuls good quality pitted green and black olives 1 cup giardiniera, drained pickled cauliflower, carrot and hot pepper mix 4 sesame or cornmeal Keiser rolls, split 8 deli cut slices sharp provolone 1/2 roasted red pepper, drained and thinly sliced grilled, weighted and pressed, yada yada puleeze.....:rolleye33:
