I had fried catfish, green beans, hush puppies, and cole slaw at Picadilly. I went for the usual Monday red beans and rice . . . but the catfish called to me.

Every so often I get an insatiable envie for some red beans. Since I cannot stand to wait the standard 24 hours for them to soak I always keep a stash of Blue Runners lying around. Today is one of those days, so Blue Runners it is. I find with some good sausage, a chopped onion and bell pepper, some crushed garlic, and some pork shoulder stock you can hardly tell the difference.

Red beans is one of my favorite meals the school cafeteria prepares.

When I get to go to a Picadilly (When we go to the "Big City" :) ) I almost always get the hamburger steak with rice. Sometimes the crawfish etoufee.

Tonight's dinner is "Pot luck". :hihi:
