Snapping Turtles

Seems like we've had this discussion before but I'm not going through 40 pages. I've read about a turtle soup but have never eaten it like that. Search John Folsom, I think. I make a sauce piquante. Cook it down til you can literally suck the meat off the bone. Bengal loves it that way.

Thought it looked like a martin but I could never see the neck so wasn't sure. It sounds like a martin. Good stuff. When I can play that well I will spend that kind of dough!
