1. There were thousands of geese in the field in front of my house again this year after duck season. I managed to get a few. Mostly snows/blues but did have a couple of specs one day.

    One obviously a youngen.

    Specs and Sandhill Cranes are probably my favorite wild fowl to eat. Specs are tender and have a sweet tast to them. Sanhills are like eating a sirloin steak, literally. When cooked properly you would have a hard time telling the difference.
  5. That's what I heard about sanhil. We smoked some and it came out good. But tough. What's your secret? My favorite dish is farm raised blackened duck. There is a place in the quarter that makes it... so good. I always forget the name of the place. Its around the corner from my Dad's place so it never really registered.

  6. Have never had Sandhill but agree on the Specs. Told my wife they were like overgrown teal.
  7. So I did up some greys this weekend with a great recipe. Mix up some blackened spices.

    1 tsp ground basil
    1 tsp ground thyme
    1 tsp garlic salt
    1 tsp white pepper
    1tsp black pepper
    1 tsp sea salt
    1 tsp onion powder
    2 tsp cayenne pepper
    1 tsp paprika

    Bourbon and Worcestershire sauce marinade

    Butter in pan a little lower than high.

    Dip one side and cook on undipped side first for 3 minutes, flip 3 minutes again.

    So good.
