Chow Chow Recipe

    I love it but never made it. Someone has given me too many peppers for me to eat, figured rather than throwing them away I'd try my hand at making Chow Chow. Thanks in advance, I'll hang up and listen.

    From Vernon Roger's Lagniappe cookbook:

    2# cayenne peppers (ground or minced in food processor)
    4c distilled vinegar
    1 c olive oil
    4t salt
    2 gal water

    Boil jars and tops in water for 10 minutes. Let stand in hot water.

    Bring vinegar and olive oil to a boil. Reduce to simmer.

    Remove jar from hot water, fill to 3/4 with peppers. Add enough oil-vinegar mix to cover pepper mix by 1/2 inch. Add 1/2 teaspoon salt. Put top on jar and seal. Return to hot water and repeat process until all pepper, vinegar and salt is used.

    Bring water that the filled jars are in to a boil for 10 minutes. Let sit in water until cool enough to handle.



    I've never tried this recipe, but I have all 4 of his cookbooks and usually like most of his recipes as written. On occasion, some things are a bit too spicy, but I can't see how that would be the case with chow chow. Good luck!

    Boy, that's something I haven't made in a long time. You're going to make me dig out some old recipe's and make some. I used to get several jars from different people every year, but it's been a while.

    Pepper relish, my Aunt Grace used to call it. Best stuff in the world over turnip greens.

    Greens w/o some sort of pepper sauce just aren't worth eating!

    When I make mustard greens I always use some bacon grease and garlic and I add plenty of hot sauce while they are cooking

    A good teaspoon full mixed in with your gravy and rice...MMMMMMMmmmmmmmm!!!!!!!!!:thumb:
