Poaching eggs...real men use one hand to crack eggs. And I crack them directly into the water but not from high up. Get close to the water so they don't splash boiling water all over Da place...so keep your hands not too low !!
Emeril knows what he's doing... Shrimp Creole for the eggs Benedict. I use allspice, lemon juice, some brown sugar and red wine with mine. The tomato paste makes it thick enough so you don't need a roux. I use a dark roux 'cause I always have it around.
