    this one is from donna hay's latest book "flavors". donna is an award winning australian food stylist who uses simple recipes to make good food with fresh ingredients. her book's chapters are arranged based on flavors such as lime, lemon, ginger, chilli's, etc. with each chapter revolving around that particular flavor (appetizers, main courses and desserts). this recipe is from the chilli's chapter:

    sticky chilli chicken

    ingredients:

    3 lbs chicken pieces

    for the chilli sauce:

    3 red chillies, seeded and chopped
    1 tb grated ginger
    2 cups water
    2/3 cup soy sauce
    1/2 cup white wine vinegar
    2/3 cup sugar
    1/2 cup chopped coriander (cilantro)

    to make the chilli sauce, place the chillies, ginger, water, soy sauce, vinegar and sugar in a deep frying pan over medium heat and allow to simmer for 3 minutes. add the chicken pieces and cook, covered, for 35 minutes turning occassionally. remove the lid from the pan and continue cooking for 25 minutes, truning the chicken until it is cooked and well coated in the chilli sauce. stir in the coriander leaves and serve with steamed rice and greens. serves 4.
