let's start a dessert thread.....

    one of my favorites is easy to make and is from emeril's first book.....it's banana loaf:

    ingredients:

    12 tablespoons (1 1/2 sticks) unsalted butter, melted (3/4 cup), in all
    2 cups plus 1 tablespoon all-purpose flour
    2 ripe bananas, mashed
    1 cup sugar
    2 large eggs
    2 teaspoons baking soda (don't need if using self-rising flour)
    3 tablespoons buttermilk
    1 cup toasted pecan pieces (put in oven on toast for 3 minutes to bring out the oils)

    1. preheat oven to 350 degrees f. grease a standard loaf pan (8 x 4 x 3 inches deep) with 1 tablespoon of the butter. dust the pan with 1 tablespoon of the flour and tap out excess.....or just use pam.
    2. in a bowl combine the bananas with the sugar and eggs until well blended. stir in the remaining 2 cups flour, baking soda, buttermilk and the remaining 11 tablespoons of butter. fold in the pecans and mix well.
    3. pour the batter into the loaf pan and bake for about 55 minutes. remove from oven and allow to cool for 2 hours.
    4. to serve, slice and serve plain or with ice cream or with strawberry or blueberry sauce (heat some water and sugar over heat and add fruit....makes a great topping).

    on buttermilk....you can make your own for this small a portion.....combine 3 tablespoons whole milk with 1/2 teaspoon vinegar and leave mixture at room temperature for 1 hour.

    here's a peach cobbler one from paula's home cooking on food network (i like her show too).....i haven't made this one but it looks good and easy to make and you could substitute strawberrys, blueberrys, rasberrys or cherrys as the fruit:

    4 cups peeled, sliced peaches
    2 cups sugar, divided
    1/2 cup water
    8 tablespoons butter
    1 1/2 cups self-rising flour
    1 1/2 cups milk

    Preheat oven to 350 degrees F.
    Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.

    Put the butter in a deep baking dish and place in oven to melt.

    Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Batter will rise to top during baking. Bake for 30 to 45 minutes.

    To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.

    Blackberries would be good too. My grandmother used to go pick blackberries and then make a killer blackberry cobbler as well as preserves.

    i think i'm going to go for it this weekend....lots of strawberries down here now (if i can find blackberry's i may mix them).....i'll let you know how it turns out......

    I don't know how to make it, but my favorite all-time dessert is Commander's Bread Pudding Souffle'. It's the one you must order with your meal because it takes that long to cook it.

    It's UNREAL!!!

    If you ever go to Commander's you MUST get this house specialty.

    yeah souffle's take alot of time....right down the road is a restaurant called le caqua vin (sp?).....very good country french cooking.....and you have to order in advance.....but very goood....

    by the way bengal b...where is crawfish, i'm starting to get a little bit worried.....he said you were at his last boil.....please get him back in this forum....thanks.....

    He started a new job a few weeks ago. I hope they aren't making him work 24 hours a day.

    an easter dessert recipe....

    PHILADELPHIA® 3-STEP® Mini Cheesecake Baskets


    Recipe Rating: 4 stars

    Prep Time: 10 min
    Total Time: 2 hr 30 min
    Makes: 12 servings

    ingredients:

    2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
    1/2 cup sugar
    1/2 tsp. vanilla
    2 eggs
    12 NILLA Wafers
    BAKER'S ANGEL FLAKE Coconut, tinted green
    Small jelly beans
    Shoestring licorice

    BEAT cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended.
    PLACE wafer on bottom of each of 12 paper-lined muffin cups. Pour cream cheese mixture evenly over wafers.
    BAKE at 350°F for 20 minutes or until centers are almost set. Cool. Refrigerate at least 2 hours. Top with coconut and jelly beans just before serving. Shape licorice to make basket handles; insert 1 into each cheesecake. Store leftover cheesecakes in refrigerator.

    Strawberry Shortcake

    My favorite dessert

    Slice a container of strawberries and place in a bowl. Make sure some of the water from wasing them is in the bowl. Mix in several tablespoons of sugar and refrigerate for an hour until the liquid is as red as the strawberries.

    Fill the shortcake shells with strawberries and squirt whipped cream on top
